Harvest: Manual in small cases
Vinification: The harvested grapes remain on the racks for about 100 days, in the wine-making process the maceration on the skins lasts more than thirty days, then it is aged in steel for 30 months. Once bottled is then left to mature for a further six months before release.
Tasting:The impenetrable and compact color reveals the “fleshiness” of this wine, a cherry jam dipped in chocolate. To remind us that it is Sagrantino we find smooth yet very present tannins.
Food Pairing: Suggested as a sipping wine or with its “Tozzetti” cookies. We hazard pairing with a very aged pecorino cheese or spicy game.
