Harvest: Manual in small cases.
Vinification: Alcoholic fermentation in stainless steel tanks at controlled temperature with maceration on the skins for about 25 days. Malolactic fermentation in stainless steel tank.
Tasting: Deep ruby red color that lessens on the rim; blackberry notes open the olfactory test, which turns in the final to spicy aromas. On the palate, you feel the still young but well balanced tannins thanks to the considerable glycerine mass.
Food pairing: Wine for roasts and aged cheeses as well as targeted combinations with many recipes inspired to this wine, such as “stracotto al sagrantino”.
