Harvest: End of August harvested by manual selection in the vineyard choosing only the healthiest grapes placed in 20 kg boxes.
Vinification: Soft pressing of the grapes with separation of the pulp from the skins after three days of maceration, then the alcoholic fermentation takes place with selected yeasts in tanks at the controlled temperature of 16-17 ° C until the sugar is completely depleted. The base wine is preserved in steel tanks at a temperature of about 5 ° C until Spring time following the harvest.
Second fermentation: The base wine is added with yeasts, bottled and capped with a crown cap. The bottles are kept prone for more than 36 months in piles so wine will undergo a slow and regular re-fermentation and will retain the carbon dioxide that developed during the process. This process ensures a sparkling future and a fine velvety persistence.
Movement: After about 45 months from the harvest date, the bottles are removed from the stacks and placed in a semi-vertical position so that the residues of the fermentation will all gather towards the cap and the same pressure generated during the setting of foam allows expelling of the residues easy to remove.
