Harvest: Manual in small cases
Vineyard: Calcareous soil with good mix of clay, exposed to south/east, 5.430 vines/ha, yield 60 q.li/ha, height 350 m a.s.l.
Vinification: The harvested grapes remain on the racks for about 100 days, in the winemaking process the maceration on the skins lasts more than thirty days. Ageing in barriques for 12 months and other 21 months in steel at controlled temperature. Stand in bottle for other 6 months.
Tasting:The impenetrable and compact color reveals the “fleshiness” of this wine, a cherry jam dipped in chocolate. To remind us that it is Sagrantino we find smooth yet very present tannins.
Food Pairing: Suggested as a sipping wine or with its “Tozzetti” cookies. We hazard pairing with a very aged pecorino cheese or spicy game.
