Harvest: Manual in small cases.
Vineyard: Calcareous soil with good mix of clay, exposed to south/east, 5.430 vines/ha, yield 60 q.li/ha, height 350 m a.s.l.
Vinification: Alcoholic fermentation in stainless steel tanks at controlled temperature with maceration on the skins for about 25 days. Malolactic fermentation in stainless steel tank. Ageing in barriques for 12 months and other 21 months in steel at controlled temperature. Stand in bottle for other 6 months.
Tasting: Deep ruby red color that lessens on the rim; blackberry notes open the olfactory test, which turns in the final to spicy aromas. On the palate, you feel the still young but well balanced tannins thanks to the considerable glycerine mass.
Food pairing: Wine for roasts and aged cheeses as well as targeted combinations with many recipes inspired to this wine, such as “Stracotto al Sagrantino”.
