Harvest: End of August, manual, selection of the healthiest grapes in the vineyard collected in 20 kg boxes
Vinification: Soft pressing of the grapes with separation of the must from the peels, then alcoholic fermentation is started with yeasts selected in tanks at a controlled temperature of 16-17° C until the sugar has been used up, obtained the base wine is stored in steel tanks at 5° C until the following spring.
Presument of spuma: The wine is added with yeasts and sugar, bottled and capped with a crown cap. The bottles are kept in piles for more than 36 months, where the wine makes a refermentation in a slow and regular way.
Degorgement: After about 45 months from the harvest, the sediments deposited in the bottle are removed by remuage, which is then topped up with the liquer d’expedition
Tasting: The color is antique rose like an onion veil soft, fine and continuous perlage. Fruit aroma of cherry and strawberries with elegant nuances of pink. In the mouth it is fresh, elegant and persistent.
